Lunch Recipe: Rainbow Salad with Home Made Vinaigrette

Serves 2-3 People

Looking to shake up your salad routine? Here’s a healthy, flavorful rainbow salad packed with powerful superfood ingredients. 

 

What you need:

    • 1 head of romaine lettuce chopped
    • 1 cup spinach chopped
    • 1/4 Red bell pepper & 1/4 yellow bell pepper diced
    • 1/2 cup shredded purple cabbage (purple cabbage is anti-inflammatory and great for your heart and bones)
    • 1 cup baby tomatoes halved (cherry or heirloom) (lycopene, which gives tomatoes their color, is great for your metabolism, your skin and heart health)
    • 1 whole cucumber peeled and diced
    • Croutons
    • Shaved parmesan ( When choosing parmesan, keep in mind that more expensive parmesan allows you to get more flavor with less cheese) 
    • We like topping with grilled chicken, but grilled tofu is an excellent alternative if you eat plant-based. 

 

Step 1

Make sure all vegetables are washed prior to cutting for salad

Step 2

In a small bowl whisk all vinaigrette ingredients together until incorporated and adjust seasoning to taste

Step 3

Assemble salad ingredients into a large bowl

Step 4

Add croutons and shaved parmesan to your liking

 

Vinaigrette Recipe

What you need: 

  • 2  tbsp Roasted garlic 
  • Juice of 1 lemon
  • Splash Rice Vinegar
  • 1 tsp Dijon Mustard
  • Salt/Pepper to taste
  • Olive Oil ½ cup

This dressing is super easy to make since it doesn't require any special care. Simply whisk everything together and you have a flavor-packed homemade vinaigrette.

 

And as simple as that, you have a healthy, satisfying, and flavor-packed salad that you can make for lunch or dinner.
