Summertime means travel and many of us are always looking for the perfect snack to take with us. The first in our series is these easy homemade egg bites. You’ve probably seen these at your favorite cafe without giving them much thought. But they’re super easy to make, packable and serve quite a few people.
Prep Time: 30 minutes
- 5 Eggs
- 1 cup Egg whites
- 1 cup Spinach
- ½ cup Red onion
- ½ cup Orange bell pepper
- Salt and pepper
- Red chili flakes
- Low Fat shredded cheese or feta cheese
Before you get started, preheat your oven to 350 degrees Fahrenheit.
Chop the bell peppers, onions, and spinach.
Lightly oil non-stick cups, or a cupcake pan, and add bell peppers and onions first.
Prepare your egg mixture by adding eggs and egg whites to a bowl and whisking them together. Then season the mixture with salt, pepper, and red chili flakes and add the chopped spinach.
Pour the egg mixture into the nonstick cups and add cheese. Then, mix the contents of each cup individually to ensure that all ingredients are incorporated.
Place in the oven and for around 20 minutes. Egg bites made with this recipe will rise slightly as seen in the photo below. Then, take the egg bites out of the oven and enjoy or pack them up to take with you!
