Party Recipe: Vegetarian Pinwheel Wraps

Looking for a satisfying meat-free snack for your next social occasion? These vegetarian pinwheel wraps are the perfect answer! 

 

Serves 1-2 (Per Wrap) 

Prep time: 20 Minutes

Ingredients (Per Wrap) 

  • Spinach tortillas burrito sized
  • ½ cup Spinach
  • 3 tbps Hummus 
  • 1/2 sliced Red bell pepper
  • ½ thinly sliced shallot
  • ½ cup Black beans
  • ½ cup Mexican blend cheese
  • Vegetarian? Or should we add protein 

Step 1

Spread layer of hummus onto tortilla wrap of your choosing (would be better to get larger ones)

Step 2

Layer the wrap with spinach and cheese (optional) on the bottom. 

Step 3

Add black beans. 

Step 4

Add sliced shallots and red bell pepper in a line in the middle. 

Step 5

Tightly roll up the tortilla and its ingredients. (It’s okay if some filling spills out on the edges)

Slice off the ends and cut into pieces. 

Step 6
